After recently appearing on BBC Two's The Sweet Makers, we asked master chocolatier Paul A Young to show us how to make crystallised edible roses. Not only are edible flowers bang on trend at the moment, but these delicately beautiful decorations give the cut rose a new lease of life as a wedding cake topper, a table centrepiece or a garnish for an indulgent dessert.

They are very simple to make and look stunning once they are done. Here's what you need to do... (Follow our instructions by watching the video above)

Ingredients

• Roses - as many roses as you wish to crystallise, but you must make sure they are edible first

• Two eggs

• Caster sugar

• Edible gold leaf

Equipment

• Small bowl

• Large mixing bowl

• A whisk and a spoon

• A medium sized brush and a small brush

• Vase

Method

1. Lightly whisk two egg whites, just enough to break their structure

2. Brush the rose head lightly with the egg whites, making sure to cover the inside petals too

3. Liberally scatter, shake and sprinkle caster sugar on, over and into the rose head

4. Place aside overnight to dry

5. Once dry, coat with a little more egg white

6. Add edible gold leaf for added glamour
